René Bajeux, the French-born chef who became a standard-bearer of his native cuisine in New Orleans, died Monday morning (Sept. 10) of cardiac arrest in Jackson, Mississippi, according to longtime friend and fellow chef Chuck Subra.
Bajeux was 61.
Bajeux arrived in New Orleans in 1997 to take over the kitchen of The Grill Room, the restaurant in the Windsor Court Hotel, one of the most influential and luxurious local restaurants of the time. He would go on to become this century's most accomplished French-born New Orleans chef.
He was, at the age of 40, already highly credentialed, arriving from Chicago, where he worked at a number of well-regarded French restaurants, including Bistrot Zinc, which he co-owned. "The bouillabaisse is so good that customers might very well plan their schedules around it," wrote Phil Vettel, the Chicago Tribune's restaurant critic, in a 1996 review.
Subra, who was working as a Grill Room sous chef when Bajeux got there, recalls being called into a meeting in his new boss's office. "You know how you have one of those life changing talks? It was one of those," Subra said.
Bajeux went on to become a close friend and mentor to Subra, who followed the chef to René Bistrot, which opened in the Pere Marquette in 2001. It was a lively modern bistro that featured some of the freshest, most technically proficient French cuisine in New Orleans, with accents from the chef's native Alsace-Lorraine: housemade sausages and charcuterie, mustard-spiked rabbit stew served over spaetzle and profiteroles served with cherry, pistachio and espresso ice creams.
"He had a great way of setting expectations," Subra said of Bajeux. "We weren't trying to meet them. We were trying to beat them. We were trying to make papa happy."
The restaurant opened as the country dealt with the trauma of the Sept. 11 terror attacks in New York City, which adversely impacted tourism in New Orleans. The Bistrot's soul-warming French cuisine starred in a laudatory review published in The Times-Picayune in January, 2002.
"It was a very uncertain time," recalled Leonardo Verde, René Bistrot's general manager, who pushed to build a distinguished wine list, including bringing in locally-obscure bottles from Alsace. "We did not treat the restaurant like a hotel restaurant. Locals filled out the tables. It was a magical little bistro."
In 2003, Bajeux helped open another trend-making restaurant, La Côte Brasserie, in the Renaissance Arts Hotel. It was seafood-focused, with a raw bar that served imported oysters and raw fish dishes, like ceviche. These were not items commonly found at oyster bars in New Orleans at the time.
"We did mussels and oysters with mignonette, back when mignonette wasn't a thing," recalled Subra, who Bajeux installed as La Côte's chef soon after it opened. Brian Landry, former chef of Borgne and current chef and co-owner of Jack Rose, was also on the staff at René Bistrot and La Côte.
In 2005, Bajeux road out Hurricane Katrina at the Pere Marquette with his family. They evacuated two days later, and the experience proved traumatic. As the chef later told The Times-Picayune, his flooded van wouldn't start after loading it up with his wife, two children, two friends, a dog and two guinea pigs.
According to the story, "A police officer of Bajeux's acquaintance passed by and, warning of oncoming looters, handed the chef a loaded gun along with some advice: 'Shoot to kill.'"
Bajeux ultimately returned to New Orleans to rebuild the Bistrot and his family's Fontainebleau home, both of which were damaged by the floods. But the storm effectively shuttered the Bistrot, which closed permanently in 2006, following a period when it was only open for lunch in a make-shift space.
The chef was well-traveled, having worked in Hawaii before landing in Chicago, and his post-Katrina career was particularly itinerant. He landed in the Caribbean, Texas, and ultimately back in New Orleans. In the past 11 years, the chef served short stints at La Provence, on the North Shore; at the Rib Room, in the Omni Royal Orleans; and at a revived René Bistrot, which briefly took over the old La Côte space.
Bajeux's most recent New Orleans posting was with the Dickie Brennan restaurant group. In January of 2017, the chef hosted a Bastille Day-themed Todd Price Taste Club dinner at the Palace Café. The menu was a return to the chef's roots: pastry-wrapped salmon Coulibiac, duck leg crépinette, Cognac-poached pears.
"It's not often that you get to work alongside a master French chef," Dickie Brennan said of Bajeux. "I valued his skills and innate abilities as a culinarian, but above all I valued his friendship. Our community lost a great talent and an even greater person."
Bajeux was working at a country club outside Jackson, Mississippi, at the time of his death.
He is survived by his wife, Penny, and their two children, Reme and Clara, all of New Orleans.
Funeral arrangements are pending.

They say the SEC means more, and clearly that translates to the tailgating game. With four of the top five tailgate scenes in the country, nobody is better than LSU in the eyes of Insider.
Insider says,
"Tigers tailgating starts Friday at 5 p.m. for Saturday games, and the food is off the charts. LSU dominates with unique and delicious tailgating dishes. Jambalaya, YUM!!!"

Liesl Bradner presents "Snapdragon: The World War II Exploits of Darby's Ranger and Combat Photographer Phil Stern"
5:00 p.m. Happy Hour in The American Sector Restaurant & Bar | 6:00 p.m. Presentation | 7:30 p.m. Book Signing
Before Phil Stern's long and successful career photographing Hollywood stars, his WWII combat photography earned him the nickname "Snapdragon" from his fellow soldiers.
Described by Vanity Fair editor David Friend as the "Chronicler of Cool," photographer Phil Stern is noted for his iconic portraits of Hollywood stars including James Dean, Marilyn Monroe, John Wayne, and Marlon Brando. Less known is his remarkable work as a combat photographer during World War II, during which he served with Darby's Rangers in the North African and Italian campaigns.
Prior to Stern's death in December 2014, an original, unfinished, tattered manuscript was discovered stashed away in an old folio box in his cluttered Hollywood bungalow. In Snapdragon, completed by author Liesl Bradner after Stern's death, catchy 1940s lingo, honest and intimate observations, and humor transport the reader 70 years back in time to experience the key battles of the Mediterranean theater. With his lens and pen, Stern introduces readers to the hardscrabble Rangers, the desert oases of Morocco and Algeria, and the muddied beaches of Mussolini's Italy. Snapdragon is an artifact of that time, told not by a man reminiscing in his twilight years but by a young soldier fresh from the battlefields.
ABOUT THE COAUTHOR: An award-winning journalist, Liesl Bradner has contributed to respected national publications such as The Los Angeles Times, The New Republic, The Guardian, Truthdig, Variety, and World War II Magazine. In addition to Phil Stern, with whom she forged a strong bond, Bradner has interviewed more than 100 artists, actors, screenwriters, authors, politicians, and photographers. In May 2016, she was part of a team of writers at Truthdigthat won the 2015 Maggie Award for best regularly featured web column (Book Review). Bradner lives in Los Angeles.
A book signing will immediately follow the presentation. Shop for Snapdragonat the

"What Flies North Must Fly South"
Wendy Rihner Talks about the Fall Bird Migration
METAIRIE - Wendy Rihner, Education Chair of the local chapter of the Audubon Society, will lead a two-night program on the fall bird migration at 7 p.m., Wednesday, Sept. 12 and 19, at the East Bank Regional Library, 4747 W. Napoleon, Metairie.
Each event is free of charge and is open to the public.
According to Rihner, "What flies north must fly south. The miracle of spring migration is only half of the fascinating life history of birds. Fall migration marks the end of nesting and rearing young, and it brings some remarkable physical changes for many species of birds. Many of our spring warblers look a lot different in the fall."
During this presentation, Rihner will discuss the following subjects and more:
· The flycatcher species of eastern North America peaks in Louisiana during September.
· Common migrants in September include blue grosbeak, indigo bunting and paint bunting, seeking native grass and weed seeds at the edges of agricultural fields.
· Yellow warblers are common in the fall. They head directly to the Gulf Coast and then turn west to the coastal bend of Texas.
· Many migrating shorebirds pass through Louisiana in September and October, including sandpipers, plovers, dowitchers, dunlin and Wilson's snipe.
· The majority of neotropical migrants peak during the third week of October. They include vireos, thrushes and tanagers that congregate around fruit trees and shrubs.

Author Event!
Kim Vaz and Ladee Hubbard
METAIRIE - Kim Vaz, author of Walking Raddy: The Baby Dolls of New Orleans, and Ladee Hubbard, author of The Talented Ribkins, will discuss their new books at 7 p.m. on Thursday, Sept. 13, at the East Bank Regional Library, 4747 W. Napoleon, Metairie.
This event is free of charge and is open to the public.
Kim Vaz, Walking Raddy: The Baby Dolls of New Orleans
One of the first women's organizations to mask and perform during Mardi Gras, the Million Dollar Baby Dolls redefined the New Orleans carnival tradition. Tracing their origins from Storyville-era brothels and dance halls to their re-emergence in post-Katrina New Orleans, author Kim Vaz uncovers the fascinating history of the "raddy-walking, shake-dancing, cigar-smoking, money-flinging" ladies who strutted their way into a predominantly male establishment.
The Baby Dolls formed around 1912 as an organization of African American women who used their profits from working in New Orleans's red-light district to compete with other black prostitutes on Mardi Gras. Part of this event involved the tradition of masking, in which carnival groups create a collective identity through costuming. Their baby doll costumes-short satin dresses, stockings with garters, and bonnets-set against a bold and provocative public behavior not only exploited stereotypes but also empowered and made visible an otherwise marginalized female demographic.
Over time, different neighborhoods adopted the Baby Doll tradition, stirring the creative imagination of black women and men across New Orleans, from the downtown Tremé area to the uptown community of Mahalia Jackson. Vaz follows the Baby Doll phenomenon through 100 years with photos, articles, and interviews and concludes with the birth of contemporary groups, emphasizing these organizations' crucial contribution to Louisiana's cultural history.
Kim Marie Vaz is the associate dean of the College of Arts and Sciences and professor of education at Xavier University of Louisiana. Her area of research is the use of expressive arts as a response to large-group social trauma.
Ladee Hubbard, author of The Talented Ribkins
At 72, Johnny Ribkins shouldn't have such problems: He's got one week to come up with the money he stole from his mobster boss or it's curtains for Johnny.
What may or may not be useful to Johnny as he flees is that he comes from an African-American family that has been gifted with super powers that are rather sad, but superpowers nonetheless. For example, Johnny's father could see colors no one else could see. His brother could scale perfectly flat walls. His cousin belches fire. And Johnny himself can make precise maps of any space you name, whether he's been there or not.
In the old days, the Ribkins family tried to apply their gifts to the civil rights effort, calling themselves the Justice Committee. But when their superpowers proved insufficient, the group fell apart. Out of frustration Johnny and his brother used their talents to stage a series of burglaries, each more daring than the last.
Ladee Hubbard is the winner of the 2016 Rona Jaffe Foundation Writer's Award and the William Faulkner-William Wisdom Creative Writing Competition for the Short Story. She lives in New Orleans. The Talented Ribkins is her first novel.

MIKE DOUSSANAT OGDEN AFTER HOURS
/// September 13 @ 6:00 pm - 8:00 pm
New Orleans native Mike Doussan started playing in clubs around New Orleans in 2004 as a sit in musician. He quickly became a regular at The Apple Barrel playing blues with Mike Hood and the Frenchmen St. Delegation, at Banks St. Bar playing funk with New Orleans Juice and anywhere Eric Lindell was taking stage with his blue eyed soul ensemble. It wasn't long before he would start his own band, Westbank Mike and the Fisher Project. Rooted in New Orleans funk and blues, the Fisher Project would go on to win Best Blues Band at the 2006 Sonny Boy Blues Society's battle of the bands. He has been a member of numerous New Orleans based bands including Gradoux, Crescent City Allstars, 101 Runners, Six Strings Down, Irene Sage Band and Dave Jordan and the Neighborhood Improvement Association. He has also played alongside Dr. John, Warren Haynes, Walter Wolfman Washington, Tab Benoit, Joe Bonamassa and Anders Osborne, to name a few. Mike's music is a melting pot of influences that come together to craft a familiar, yet unique sound with a heavily New Orleans flavored backbone. His lyrics are easy to relate to and his music begs you dance, a formula that entertains a diverse crowd wherever he plays.
The 2018-2019 concert season begins with Schubert's Symphony No. 8 'Unfinished'. Although Schubert only got halfway through this composition before his death, it is still sometimes considered one of the first Romantic symphonies. Friends of the Cabildo Second Thursday Lecture Series with author C. Dier - The 1868 St. Bernard Massacre. Thursday September 13, 2018 6 PM. Admission is FREE and open to the public 400 Esplanade Ave. - New Orleans Jazz Museum
Days before the tumultuous presidential election of 1868, St. Bernard Parish descended into chaos. As African American men gained the right to vote, white Democrats of the parish feared losing their majority. Armed groups mobilized to suppress these recently emancipated voters in the hopes of regaining a way of life turned upside down by the Civil War and Reconstruction. Freed-people were dragged from their homes and murdered in cold blood. Many fled to the cane fields to hide from their attackers. The reported number of those killed varies from 35 to 135. The tragedy was hidden, but implications reverberated throughout the South and lingered for generations. Author and historian Chris Dier reveals the horrifying true story behind the St. Bernard Parish Massacre.
October 2018, will mark the 150th anniversary of the St. Bernard Massacre. 6 PM - 7 PM

Roger Guenveur Smith returns to CAC with a performance that the Washington Post called "a striking, idiosyncratic solo work," Rodney King.
Smith's New Orleans engagement is a rare opportunity to experience live an artist who, according to The New York Times, "gets it all and gets it brilliantly." In writing this rhythmically wrenching tour de force monologue, Smith was inspired by the late Rodney King, whose videotaped beating by the Los Angeles Police Department in 1991 sparked rioting upon the officers' acquittal of assault charges the next year.
Roger Guenveur Smith returns to CAC with a performance that the Washington Post called "a striking, idiosyncratic solo work," Rodney King. Having enjoyed international acclaim from New York City's Public Theater to London's Tate Modern Museum, the

In writing this rhythmically wrenching tour de force monologue, Smith was inspired by the late Rodney King, whose videotaped beating by the Los Angeles Police Department in 1991 sparked rioting upon the officers' acquittal of assault charges the next year. King tragically expired in his backyard swimming pool in 2012. Smith received a New York Dance and Performance (Bessie) Award for Rodney King in 2015.
Smith's Obie Award-winning A Huey P. Newton Story was previously presented at the CAC, as was Inside the Creole Mafia, the "not-too-dark comedy" which earned Smith and co-creator Mark Broyard an official key to the city. Smith is on faculty at Cal Arts where he teaches a workshop entitled Performing History. Smith's prolific screen credits include Kasi Lemmons' classic Eve's Bayou and the acclaimed Queen Sugar. He and longtime colleague Spike Lee were honored at last year's Cannes Film Festival for their extraordinary body of collaborative work.
This presentation of Rodney King is made possible by the Wallace Foundation.
The CAC is supported in part by a Community Arts Grant made possible by the City of New Orleans and administered by the Arts Council New Orleans, as well as by a grant from the Louisiana Division of the Arts, Office of Cultural Development, Department of Culture, Recreation and Tourism, in cooperation with the Louisiana State Arts Council. Funding has also been provided by the National Endowment for the Arts, Art Works.

FAQs
What does the dinner include?
Each dinner is six-courses with wine pairings.
Dress Code?
Dress for a nicer evening out. We recommend jackets for men, but a tie is not necessary.
Do I have to bring my printed ticket to the event?
No. We will have a list with attendee names.
Is seafood the only item served?
This is a seafood dinner, so the dishes will all feature fish or shellfish.
When can I see the menu?
With seafood, we want the freshest available product, which sometimes isn't known until right before the dinner. We will do our best to get menu information out as early as possible, but trust us, whatever these chefs make is going to be delicious.
Can menu subsitutions be made?
Unfortunately, we cannot accommodate menu substitutions.

City to Increase the Number of Waste Tires Accepted at the Recycling Drop-Off Center from Four to Five
NEW ORLEANS - In an effort to reduce the number of illegally abandoned waste tires, the City of New Orleans Department of Sanitation has increased the number of waste tires that will be accepted at the Recycling Drop-Off Center from four to five. The Recycling Drop-Off Center, located at 2829 Elysian Fields Ave., is open on the second and fourth Saturday of each month from 8 a.m. to 1 p.m.

Since the City established the Recycling Drop-Off Center in August 2010, a total of 1,193 tons have been recycled. Since the current curbside recycling program began in May 2011, a total of 48,822 tons have been recycled. As a result of the City's efforts since 2010 to appropriately dispose of waste tires illegally dumped and collected from residential properties, more than 214,966 waste tires have been transported to the only LDEQ-approved waste tire processor in the City. The tires collected are recycled.
Occupants of residential properties, which are eligible to receive solid waste collection by the City, are also eligible to place up to four (4) tires next to their garbage collection carts on the second collection day of each week (or on Wednesdays in the French Quarter and DDD). Businesses are not eligible for this service.
Residents are reminded that an ordinance was passed earlier this year (Sections 26-415 through 24-430 of the City Code), which established minimum standards for the storage, sale, repair, removal, installation, hauling and disposal of motor vehicle tires and established a stronger enforcement process with significant fines and penalties.
It is illegal to store more than 20 tires on a property without authorization from LDEQ as a registered Waste Tire Generator or to transport more than 20 tires without a permit from LDEQ, which must be prominently displayed on the vehicle transporting the tires. All tires must be covered to prevent standing water which could become breeding grounds for rodents and mosquitoes that could carry the West Nile or Zika viruses. All Waste Tire Generators must keep LDEQ-approved manifests on site, for a minimum of five years, which document that tires have been legally transported and disposed of by an LDEQ-permitted transporter and tire processor.
The Department of Sanitation is working the NOPD, the Department of Safety and Permits and the Department of Finance to ensure that all tire shops are in full compliance with City and State Codes. The owners of properties that are found not to be in compliance will be cited. As a result of a joint enforcement action involving LDEQ's Criminal Investigation Division and NOPD, arrests have been made for illegally transporting and disposing of tires in Orleans Parish.

This full Moon corresponds with the time of harvesting corn. It is also called the Barley Moon, because it is the time to harvest and thresh the ripened barley. The Harvest Moon is the full Moon nearest the autumnal equinox, which can occur in September or October and is bright enough to allow finishing of all the harvest chores.
